Eating and riding the rainbow

I’m a little bit late to the “Fast and Fresh Friday” link up, being a Saturday and all, but yesterday was one of those days that was pretty busy!   I cobbled a few leftovers together for the family and whacked together this very quick dessert – fruit salad.

It’s so easy you don’t really need a recipe – just whatever fruit you have hanging around.  I used up another tin (in a bid to de clutter my pantry of tinned food) and a medley of fruit and came up with this concoction….

Tasty, fresh and full of goodness.

I used a tin of pineapple pieces, kiwi fruit, banana, strawberries, apples, oranges and passionfruit!

Here’s another photo because I think it just looks so pretty!  It tasted pretty good too!

I’ve also “ridden the rainbow” in my Cycle classes lately.   Inspired by the Tour De France, I came up with the concept of “The Three Jerseys” rides for my classes.   Last week we rode the “Polka Dot Jersey” class, where I choreographed a million different styles of hill climbs into the mix and this week we all challenged ourselves with sprint efforts for the “Green Jersey”.   It was hard work, but a lot of fun and I am continually inspired by all of the participants who I have in my class.  Today’s  enthusiasm and energy has left me with a  big grin on my face for most of the day – it is just such a wonderful thing to be able to share something you love with a great bunch of people.   Next week, we’re backing it up with the “Yellow Jersey” ride finishing with the final time trial into Paris – can’t wait for this one either!

I’ve also hit the weights hard with Super Fit Emma this week and we were both pleased with our efforts this morning, especially after such a tough class.   Of course, having done a record four strength training sessions this week, I am sore all over, but also quite delighted to be hitting it hard….the term “cheerfully pasted” comes to mind.

Looking forward to another ride with the girls tomorrow – if it doesn’t rain (there’s something about me, cycling and rain that isn’t the greatest combination)!

Looks delicious Liz and yes, such a great way to turn bits of fruit into a satisfying meal. Yum!

Thanks Kyrstie, I’ll try to be a bit more creative next week – Friday is my “crazy” day :) – guess that’s why I need a meal on the table in under 30 minutes! lol!

I’m slack with fruits (and veges) but watched my mum eat a very healthy fruit salad with greek yoghurt she whipped up for herself after dinner tonight. (I saved myself for caramel fudge!).

You can’t go wrong with fruit salad and this looks beautifully colourful. Do you find, though, that as soon as you use one stored up tin from the pantry, you feel the need to re-stock it?! (Maybe that is just me!)

The fruit salad looks so good. I was just looking at the can of pineapple thinking that I have absolutely no problems buying canned fruit (unsweetened of course) but no one could pay me to buy tinned vegetables apart from chick peas or kidney beans. The other day I was in that aisle in Woolies when I caught sight of a can of home brand green beans and nothing looked less appetising than the greyish looking beans they had put on the can. I suppose no one could sue them for false advertising.

Hi Liz! Yes, your fruit salad looks pretty! I’ve been eating frozen bananas lately (remember, we’re in a very long heat spell. Everything possible is going in the freezer before our mouths.)
